Delica Pumpkin Hummus

Serves: 6
Ingredients

400g Chickpeas, Cooked

1 Delica Pumpkin, Flesh Scooped 

1 Head of Garlic

1 Green Chilli

100g Pumpkin Seed Oil

1/2 Orange

Salt

Extra Virgin Olive Oil

Pepper

Lemon Juice

Tahini

Splash of Water

Pinch of Vadouvan Spice

METHOD

Split a delica pumpkin in half, score and season with olive oil, salt, a split chilli, a split head of garlci and a pinch  of vadouvan spice, and olive oil. Roast in a pre-heated oven (200 degrees celcius) for 30 – 40mins or until soft. 

In a blender add cooked chickpeas, scooped pumpkin flesh, garlic, pumpkin seed oil, orange juice, lemon juice, and a splash of water. Blend until smooth and season with tahini, salt, pepper, and more citrus juice to taste. Optionally, top with pumpkin seed oil and toasted pumpkin seeds.
