Marie Rose Sauce
Ingredients

Marie Rose Sauce

5 Egg Yolks

70g Dijon Mustard

20g Maldon Salt

15ml Sherry Vinegar

240ml Ketchup

5ml Worcestershire Sauce

2g Tabasco

25ml Cognac

15ml Vodka

2g Espelette Pepper

1L Vegetable Oil

 

 

METHOD

Using a large bowl and a whisk. Add the yolks, dijon mustard, vinegar – emulsify the vegetable oil in gradually until thick. now season with the remaining ingredients.

Pass through a fine mesh sieve.
